Steve,

Thank you for your concern. We will not be updating the title - but rather, I will post a disclaimer in the recipe. We do NOT want to mislead people - but we do rank rather well on the term. This cake is a made with Splenda for baking which does contain sugar. This is not a Sugar Free cake.

Thanks!

HI, Am not getting into the argument but yes Splenda comes sugarless and there is also one for baking that has sugar; it comes in a large pale yellow bag.
I am looking for recipes using Stevia, not alterntives to stevia such as truvia and others that contain chemicals but using pure stevia. I heard there were pound cake recipes using stevia but ea one I find has sugar or some other sweetener.
We cam eup with our own apple pie and also carrot cake recieps usign stevia so maybe we need to exteriment and come up with one on our own (my Mom and I)> Will let you know if I do and in the meantime if anyone has such recpies, please post. Thanks so much. Cher

No, this is NOT sugar free when made with Splenda for Baking. As Gina noted, Splenda for Baking is a blend of sugar and Splenda.

Splenda also has the same recipe with plain Splenda on their website, in addition to the Splenda for Baking recipe. The results are much better on this cake if you use the creaming method; in other words, make it like a regular pound cake. And make sure you don't over or underbake it; either one is fatal.

I am a diabetic and bake cakes with Splenda very often. My cakes rise beautifully. It isn't the sugar that makes cakes rise, it's the baking powder and baking soda in the flour.

You do realize that Splenda blend still has sugar in it, right? I made this same recipe-off recipe zaar with straight splenda and it didn't rise but did brown. I cooked it about 45 minutes also but in a 13X9 pan. I put fruit on it for my husband and he liked it. He'd rather have my normal poundcake but this is a good alternative if you're supposed to be sugar free. I bake and I know you just can't bake quality stuff without sugar. It's not going to rise and that's what makes baked goods so good.

I only point out the fact about Splenda blend because some diabetics that have not had to pay attention to nutrition before do not read labels and assume a lot when they see a label. You have to read every ingredient. They hide sugar, cornstarch, bleached flour everywhere. Feeding a diabetic this poundcake with sugar and then putting fruit on top will most likely raise blood sugar. I hope y'all had a wonderful day with her. It's a royal pain in the tail to figure out how to cook so that everyone can enjoy the same meal and yours sounded delicious. But, I'd have to say put a hold on the Splenda Blend and just go for cobblers using whole wheat flour and splenda-you don't require much rising for those recipes. Anyone who says that there is an alternative to everything is just lying. We change to add years to our life. Otherwise, we'd eat what tastes good and is easy to make and take the consequences.
